Potatoes covered with sauce (papas chorreadas)

Ingredients:

6 large potatoes, cooked & peeled
2 tablespoons of olive oil
1 medium onion, chopped
2 large tomatoes, chopped
salt and pepper, to taste
1/2 cup cream
1 cup muenster cheese, grated

Preparation :

Saute the onion in oil until soft, about 10 minutes.

Add the tomatoes, salt and pepper. Saute 5 minutes.

Stir in cream & cheese until cheese begins to melt.

Arrange the potatoes on serving platter and top with sauce.

Yucca empanadas

Ingredients:

2 pounds of yucca, peeled and cut into chunks2 table spoons of white cheese grated

2 egg yolksfilling of your choicesalt to taste

Preparation:

Cook the yucca in salted hot water until they are soft.

4) Serve hot, and separate with fresh milk cream, capers and pepper if desired, for guests to serve as much as they want. This recipe has many variations, but this is one of the most typical dishes from Colombia.

Almojábanas

Ingredients:

2 cups of white cheeese or curdled cuajada 1 cup white cornmeal 1 table spoon of melted butter 1 tea spoon of baking powder 1 table spoon of cornstarch 3 eggs

Preparation:
